Smoked Salmon & Brussels Sprout Scrambled Egg Whites

Smoked Salmon & Brussels Sprout Scrambled Egg Whites
Components
- 8 egg whites
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tsp olive oil
- 1 lb brussels sprouts, thinly sliced
- 4 oz smoked salmon, roughly chopped
- 1 cup grape tomatoes, halved
- 1/4 cup recent parsley, roughly chopped
- 1/4 cup salsa
- 4 slices entire grain bread, toasted
Instructions
In a small bowl, whisk collectively the egg whites, salt and pepper and put aside.
Place a big, nonstick saute pan over medium-high warmth for a number of seconds, then add the oil. Add the Brussels sprout and saute, stirring sometimes, till browned and softened, about 4 minutes. Add the egg whites and smoked salmon and decrease the warmth to medium-low, and stir to mix.
