Components

  • 1 14 oz. bundle extra-firm tofu, drained and pressed dry

  • 2 tbsp olive oil, divided
  • 2 cups cauliflower florets
  • 2 cups (50g) kale, chopped
  • 2 tbsp tahini
  • 2 tbsp lemon juice, freshly squeezed
  • 1 tbsp tamari soy sauce
  • 1 tbsp water
  • 1 clove garlic, minced

Instructions

Preheat the oven to 400°F (200°C). 

Minimize the tofu into 1/2-inch thick cubes. Place the tofu on one sheet pan. Add the candy potatoes to the identical pan and drizzle with 1 tbsp olive oil, tossing gently to coat.

Place the cauliflower and kale on the second sheet pan and toss with the remaining 1 tbsp olive oil.

Roast each pans for 10 minutes. Take away the kale and cauliflower pan from the oven. Gently stir the tofu and candy potatoes, turning them with a spatula. Return the pan to the oven and proceed roasting for 20 minutes, or till the greens are tender and frivolously browned.
